For the hydraulic fluid to maintain its viscosity, the hydraulic system should operate at a certain pressure and temperature level, which the manufacturer specifies. Ideally, the temperature shouldn't be very high so it can help prevent system failure or damage. If you notice high temperatures, there's probably an issue with the cooling unit.
